Chicken Cacciatore

Servings: 4-6

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 bell peppers (red, green, or a mix), sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 cup Salvatore’s Gourmet Tomato Sauce
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine (optional)
  • 1 cup mushrooms, sliced (optional)
  • 1/4 cup black olives, pitted and sliced (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving
  • Cooked pasta or rice, for serving

Instructions:

  1. Season the chicken thighs with salt and black pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs, skin side down, and cook until they are golden brown and crispy, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sliced bell peppers. Sauté until they start to soften, about 3-4 minutes.
  4. Add the minced garlic, dried oregano, dried basil, and red pepper flakes to the skillet. Sauté for another minute until fragrant.
  5. Pour in the Salvatore’s Gourmet Tomato Sauce, chicken broth, and white wine (if using). Stir to combine and bring the mixture to a simmer.
  6. Return the browned chicken thighs to the skillet, nestling them into the sauce. Cover and let the chicken simmer in the sauce for about 20-25 minutes, or until the chicken is cooked through and tender.
  7. If using, during the last 10 minutes of cooking, add the sliced mushrooms and black olives to the skillet. Stir gently to incorporate them into the sauce.
  8. Taste and adjust the seasoning with salt and black pepper as needed.
  9. Sprinkle the chopped parsley over the chicken cacciatore just before serving.
  10. Serve the chicken cacciatore over cooked pasta or rice. Garnish with grated Parmesan cheese.
